Earlier this week I came across my friend Sarah’s post about some pancakes she made with gelato. My first thought was how, but when I looked at the recipe, they looked absolutely amazing! Being such a unique recipe, I thought what better way to share it with others than to invite her to share her gelato pancake recipe on my blog! I was so happy she agreed to it, this recipe is not only amazing (seriously, who would’ve thought of ice cream in pancakes?!), but super easy. I know you guys will love it! A few weeks ago I was shopping in my local grocery store when I saw the Gelato Fiasco in Maine Wild Blueberry Crisp sitting lonely on the shelf and decided to buy it. I should have known that since it was the last one there that maybe something was wrong with it, but I didn’t. I brought the pint home and when I opened it up to take a bite I noticed immediately that it was freezer burned. That did not deter me. I took a bite anyway. Gross. Terrible. Grainy? Definitely freezer burned. Not wanting the pint to go to waste I started thinking about what to do with it and one Sunday morning it came to be. Pancakes. I let the ice cream melt and got to cooking. They turned out AMAZING. Super fluffy and delicious. I topped them with blueberry syrup and a little bit of butter.
How to turn your freezer-burned ice cream into fluffy pancakes!
Ingredients:
– 1 melted pint of ice cream (I used Gelato Fiasco Maine Wild Blueberry Crisp Gelato)
– 1 3/4 cups of flour
– 1/2 teaspoon baking soda
– 1 3/4 teaspoons baking powder
– 1/2 teaspoon salt
– 2 eggs
– Butter (for the pan)
Directions:
Combine all ingredients except the butter into a bowl.
Whisk until combined, but still lumpy.
Heat up a skillet to medium heat and melt butter in the pan.
Add 1/4 cup of batter per pancake.
Cook for about 2 minutes per side.
Serve with syrup and/or butter!
